Lycopene, a carotenoid found in plant foods, is also a red pigment. Dark red needle-like crystals, soluble in chloroform, benzene and fats, but not in water. It is unstable to light and oxygen, and turns brown when it meets iron. Molecular formula C40H56, relative molecular mass 536.85. There are 11 conjugated double bonds and 2 non-conjugated double bonds in the molecular structure, forming a linear hydrocarbon. There is no physiological activity of vitamin A, but it has a strong antioxidant function. The content of ripe red plant fruits is higher, especially in tomatoes, carrots, watermelons, papaya and guava. It can be used as a pigment in food processing, and it is also often used as a raw material for antioxidant health food.
1. The lycopene powder can be used as the food pigment colors.
2. The lycopene powder also can be used in the cosmetic products such as lycopene skin cream, mask and so on.
GNPD data shows that there are 177 new supplement products containing lycopene in the world. The State Food and Drug Administration (CFDA) can find that there are 31 types of lycopene health products with the national food health word, including 2 imported health products, and the others are domestic health products. These 31 health products are mainly used for anti-oxidation, delaying aging, enhancing immunity, regulating blood lipids, etc. Among them, 2 are tablets, 1 oil, and the rest are capsules.
GNPD data shows that there are 81 new skin care products containing lycopene and 51 cosmetics. Typical products such as lycopene moisturizing lotion, etc., have whitening and anti-aging effects.
In the field of food and beverages, lycopene has obtained the European "novel food" approval and the U.S. GRAS (generally recognized as safe) status, among which non-alcoholic beverages are the most popular. According to GNPD data, there are 20 new products: 7 in bread and breakfast cereals; 7 in processed meat, fish and eggs; 7 in dairy products; 6 in chocolate and confectionery; sauces and seasonings 5 kinds; 5 kinds of desserts and ice cream. Applying it to dairy products not only maintains the nutrition of dairy products but also enriches its health care functions.
